Borscht is also great stuff: I have had it in Polish cafes in the UK. I am surprised it is not much more popular; given its natural sweetness, it should rival tomato soup. I guess by “canned” you chaps mean bottled pickled beetroot, rather than something in an actual steel can. The latter is what we in the UK mean by “canned”. Commercial pickled beetroot is good, but it is better if you do it yourself. We can also get vacuum packed, non-pickled cooked beetroot in the UK quite easily: there being no vinegary liquid, use these for salads, or with cheese, or as a side vegetable. Yummy. Uncooked beetroot is also available in season, and they cook well in the microwave, once the outer skin is scored. With their great colour they must also be very good for us.<br />I've never tasted borscht. I cannot stand soggy bread. Likewise salads where the beetroot hasn't been properly drained and the juice permeates everything else. I'm prepared to give them another go this summer. I'll buy canned baby beets and do like I do with gherkins, roll each one in paper towel to dry it off before eating. I like the flavour, just not the juice soaking through everything. Beetroot Indian style is also yummy - diced and braised in a blend of ground coriander, amchoor (green mango powder), fennel (seeds or powder) and a little cumin powder, a spoonful of tomato paste and enough water to form gravy. (No chilli, note!) ....Borscht is another favourite... I actually just bought beetroot believe it or not!
